It’s likely that your turnips were old. While fresh turnips are potato-like and almost buttery, when they’ve sat too long (at your house or just at the market!) they commonly become very bitter and lose their flavor. A great way to buy turnips is with the greens still on, because the greens don’t lie about age! You can also try choosing smaller-sized turnips. Best of luck in your turnip adventures…

I just made this soup and it is delicious. The sweet potatoes really pair well with the turnips. I added some good olive oil at the end to finish the soup and some maple syrup to add a touch of sweetness and flavor. Lots of black pepper and bam! delicious soup. Creamy and satisfying with no cream! thanks!
