Gingerbread-Goji Latte (Caffeine-Free!)

As I write this, I have no less than five candles lit, two strands of white twinkle lights dazzling around the fireplace, my softest blanket strewn about my shoulders, and a mug of this gingerbread-goji latte sitting next to me (for what’s now the third time in under a week) Hey, when it works, it works, and who am I to question the holiday spirit?

But about this latte … I think the ceiling has officially been removed on what can be called a latte these days, with everything from tea to herbs to mushrooms being warmed, frothed and served under the latte umbrella. As someone who personally doesn’t do particularly well with regular coffee consumption, this elevation in variety excites me greatly. And in fact, there are very few sweet-leaning superfoods that aren’t enhanced by being consumed in this soothing manner – the epitome of comfort! Try this treat for yourself and see what I mean.

GINGERBREAD-GOJI LATTE

Coffee-free, this superfood-rich, silky latte makes a special treat for the holidays with it’s abundant warming spices and sweet flavor.

Makes 2 servings

3 cups unsweetened almond milk
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 teaspoon ground ginger
1 tablespoon finely chopped cacao butter*
2 tablespoons coconut sugar
2 tablespoons Navitas Naturals Goji Berry Powder
1 tablespoon lucuma powder
1 teaspoon molasses
¼ cup non-dairy whipped cream, for serving (optional)

In a small saucepan over medium heat, warm the almond milk, cinnamon, nutmeg, cloves, and ginger. When the liquid begins to simmer, remove from heat and stir in the cacao butter. Transfer the mixture to a blender and add the remaining ingredients. Blend until smooth. Pour into serving cups, topping each cup with some of the froth in the blender. If desired, serve with a dollop of whipped cream and a sprinkle of cinnamon.

*Coconut oil may be substituted as well.
