The holidays are just setting in and I’m stoked. I have an amazing (amazing!) pumpkin pie recipe that I’ll be posting in the next few days, just in time for Thanksgiving. In it, I’m using a special healthy sweetener called Yacon Syrup, which is made from a sweet, low glycemic root. I thought I’d give you a little headstart on the recipe, so here’s a quick video I did with Navitas Naturals featuring this exceptional ingredient. Watch the vid, go out and grab some yacon, and then meet me back here for a fabulous Pumpkin Pie! Tag!

PS: Shhhh…. there’s a big gorilla in the room, which explains why haven’t I been posting more as of late. It has to do with a big, fun project that’s been thrilling, and also excellent at eating up my time (gotta love the bad puns). I promise I’ll leak the big news soon, but in the meantime, let’s just say it’s delicious, healthy, and rhymes with lookshmook. Hmm. I’m not very good at this game, am I?

When I need a sweet boost in recipes I’ll always turn to fruit or stevia first (whole natural foods = yay!), but when those foods simply can’t pull the weight, it’s palm sugar comes to the rescue. I teamed up with superfoods company Navitas Naturals a couple weeks ago — who offers organic palm sugar — and shot this fun Navitas-style video for their “Chef’s Notes” video series. In this video we discuss what makes palm sugar so easy to love, how to use it, and showcase my mini-recipe for Palm Sugar Limeade as well (it’s a winner). You can find Palm Sugar in natural food stores and also online.

Sweet Seed Candies

Similar to the traditional Greek sesame candy “Pasteli,” which is made with honey and sesame seeds, these superfood candies take advantage of yacon syrup’s more complex flavor and healthy benefits. Crunchy and chewy at the same time, these all-natural candies are addictingly delicious. If you cannot find pre-roasted/toasted sesame seeds, use raw ones — just pop them in the oven for 5 minutes at 350 degrees ahead of time.

INGREDIENTS:
½ cup yacon syrup
¼ cup hemp seeds
½ cup toasted sesame seeds

DIRECTIONS:
Oil a baking tray.

Over medium-low heat, warm the yacon syrup for a minute until it gets bubbly. Reduce the heat to low, add the seeds, and simmer for 3-4 minutes longer, stirring constantly.

Spread the mixture onto the pre-oiled tray into about a ¼ inch layer. Let cool completely (about 15-20 minutes). Use kitchen scissors to cut into squares or desired shape. Makes about 2 dozen candies.

healthy benefits: gluten-free, calcium, protein, essential fatty acids, low(er) sugar, prebiotics (healthy digestion)

Live Without Type 1 is a wonderful organization that offers valuable information on natural solutions for those with Type 1 diabetes. And with one in three Americans having diabetes or the precursor to it (according to the American Diabetes Association), this kind of healthy solution is a true revolution just begging to hit the spotlight.

At just three years old, little Kylie was diagnosed with Type 1 Diabetes. As diabetes is an “incurable” disease, her family was absolutely devastated. Yet rather than accepting the lifelong fate of insulin shots and drugs, her mother Kim was determined to find a better road for Kylie’s treatment. Amidst a crisis situation, Kim discovered that following a natural diet specifically designed to stabilize insulin levels — including low glycemic, grain-free, and cow milk-free foods — served as a profoundly effective method in combating the disease. Kylie’s blood sugar levels have been treated solely through a natural diet plan. The results have been so great, the family now celebrates “We LIVE WITHOUT TYPE 1.”

Today, Kylie enjoys a healthy, normal lifestyle without having to rely upon insulin shots or drugs – an achievement that most diabetics can only dream about! Having founded Living Without Type 1 in 2008, Kim now helps others effectively fight diabetes naturally.

Both Kim and Kylie stopped by on their recent trip to Los Angeles to make an easy healthy recipe that would be good for Kylie. Watch us make it HERE!
