Cranberry Pepita Energy Bars

Give your metabolism a boost with green coffee powder while staying energized and satisfied at the same time!

Makes 10

3/4 cup raw almonds
1/2 cup raw pepitas, divided
1/4 cup plus 2 tablespoons green/gold raisins, divided
3/4 cup dried cranberries (fruit-juice sweetened preferred)
2 tablespoons green coffee powder
big pinch himalayan salt
1/2 cup soft Medjool dates (about 7-8 large), pitted

 

In a food processor, combine the almonds, ¼ cup pepitas, ¼ cup green raisins, cranberries, green coffee powder and salt. Blitz ingredients into small gravel-sized bits. Add the dates and process into a dough. Stop the machine and test the consistency: dough should be very soft and stick together very easily. If the dough is too dry (due to moisture level of the dates), blend in a touch of water – a teaspoon at a time – until dough is the correct texture. Add the remaining ¼ cup pepitas and 2 tablespoons of green golden raisins, and pulse several times to incorporate, while leaving whole seeds and dried fruits remaining for texture.

Place a large piece of saran wrap on a cutting board. Spill the dough out on top, and compact by hand into a 1-inch thick rectangle. Tightly wrap the saran wrap around the rectangle, then use a rolling pin to flatten and further compact the dough, flipping the rectangle over over a couple times as needed. Remove the wrap and cut into 10 bars, or smaller bites as desired. Wrapped and covered, bars may be stored at room temperature for several weeks.
